Raspberry Bars

Ingredients

  • ¾ Cup butter or margarine
  • 1 Cup tightly packed brown sugar
  • 1 tsp. vanilla extract
  • 1 ½  Cups flour
  • 1 tsp baking soda
  • 1 ½ Cups old-fashioned oatmeal
  • 12 oz. Raspberry-Cranberry Jam ***

Directions

Preheat oven to 400 degrees. Cream butter and brown sugar until fluffy, add vanilla extract.  Mix dry ingredients then add to butter/sugar mixture and mix well.  Press half of the crumbs into a greased 13 x 9 inch baking pan.  Spread with jam, crumble remaining mixture on top. Bake for 20 to 25 minutes.  Cool, then cut into bars.

***Can be made with any cooked jam.
